Quoi de meilleur quand il fait bien chaud, qu’une crème glacée maison, très crémeuse qui sort juste de la machine?! Je n’ai même pas attendu avec mes amis de mettre la glace au congélateur. Nous l’avons mangée entièrement dans le bac inox de la machine avec nos cuillers! Elle était du coup merveilleusement fondante! Cette recette est un classique, mais comme toujours, je vous propose ma version avec encore plus de vanille et de moelleux!
Mettre les gousses de vanille, 100g de sucre (sur les 170) et le lait dans une casserole sur feu doux. Dès l’ébullition, arrêter le feu et laisser infuser la vanille.
Mettre les 70g de sucre, les 5 jaunes, la poudre de lait entier et le stabilisateur dans une jatte.
Blanchir le tout au fouet manuel ou électrique.
Au bout de 10 min d’infusion, ouvrir les gousses et racler la vanilline qu’il faut mettre dans le mélange jaunes/sucre.
Remettre le lait à bouillir, puis le verser tout en mélangeant sur l’autre mélange.
Remettre le tout sur feu doux en laissant les gousses vides. Cuire le tout comme une crème anglaise (à ce stade, c’est une crème anglaise!) à 85°C. Il ne fait surtout pas faire bouillir le mélange.
Quand la crème est à température, enlever du feu et ajouter la crème fleurette froide. Bien mélanger et laisser refroidir.
Quand le tout est à température ambiante, mettre au réfrigérateur pour au moins 2 heures.Enlever les gousses et mettre ensuite en turbine à glace ou sorbetière comme indiqué dans le manuel.
Quand la machine s’arrête, mettre la crème glacée dans un bac puis stocker au moins 2 heures au congélateur pour un crémeux maximum!
