Je vous avais déjà proposé un version de cookies au chocolat blanc. Mais je n’arrête jamais d’expérimenter. Voici de nouvelles proportions de pâte avec cette fois des noix de macadamia ou des noix de pécan. Je vous donne deux procédés différents pour des cookies énormes et délicieux. Je me suis tellement régalé à les faire ! Mais quand je les ai goûtés, je savais qu’ils allaient vous plaire !
Dans la cuve de votre robot ou dans un récipient, mettez le beurre, le sel, la vanille, le sucre et la vergeoise blonde.
Mélangez jusqu’à avoir une sorte de crème. Ajoutez alors les 45g d’œuf. Pour cela, battez en omelette un œuf et pesez-en le nécéssaire.
Mélangez puis versez la farine et la levure. Pour la levure, vous avez vu que je mets 1/16 de cuillerée à café. Comment je fais? J’ai des measuring spoons à la maison qui vont jusqu’à 1/8. Je ne mets que la moitié ! Aussi simplement que cela. Mais sinon vous pouvez mettre une bonne pointe de couteau.
Un petit mélange et hop le chocolat blanc. Pour ma recette j’ai pris la marque cacao Barry (le chocolat blanc Zéphyr).
Ensuite à vous de voir. Vous pouvez choisir d’y mettre les noix de macadamia ou les noix de pécan. Pour macadamia :
Coupez-les grossièrement.
Hop dans la cuve !
Je vous propose une nouvelle méthode pour avoir de beaux gros cookies. Je pèse ici des boules de 100g. Je les mets ensuite dans un petit cercle de 7cm ou je les tasse. De cette façon on a des cookies parfaits sans avoir de « coupure » dans le chocolat contrairement à la méthode proposée après.
Laissez reposer les cookies crus au réfrigérateur pendant au moins 1 heure.
Faites-les ensuite cuire 15-16 minutes à 180°C. Ils ne doivent pas être trop cuits au centre.
Pour les noix de pécan, mettez-les coupées dans la pâte.
Mélangez bien.
Ici j’ai roulé la pâte en un boudin de 7-8cm de diamètre que je mets dans un film étirable.
Laissez reposer la pâte 1 ou deux heures au frais. Coupez ensuite des tranches de 1cm d’épaisseur. Les cookies doivent faire en gros 100g.
Faites cuire également 16 minutes à 180°C. Le centre pas trop cuit !
Dégustez-les encore tièdes ou alors refroidis. Ils seront délicieux pendant 3 ou 4 jours conservés dans une boite hermétique.
