Je vous propose aujourd’hui un dessert un peu particulier. On m’a proposé un partenariat avec Chavroux pour imaginer une recette où ce fameux fromage frais de chèvre serait utilisé. Mais la demande était de garder la forme si reconnaissable. Je pouvais en faire du salé ou du sucré. J’ai donc imaginé un petit cheesecake à la figue, posé sur un sablé reconstitué aux noix de pécan. Le tout donne un dessert ultra frais et délicieux, très peu sucré. Mes amis ont été bluffés, se demandant ce que cela pouvait donner. J’ai moi-même été étonné de voir à quel point cela était bon, car j’y suis un peu allé à l’aveugle. Le dessert tient en plus parfaitement sans gélatine ni agar-agar ! L’association entre la figue et la consistance du fromage de chèvre donne un crémeux parfait et des saveurs inattendues. Avec en plus le sablé reconstitué aux noix de pécan et beurre demi-sel, c’est un vrai bonheur ! Et surtout, c’est tellement facile à faire, car vous aurez le moule avec le Chavroux !
Mixez finement puis versez dans un petit récipient et ajoutez-y le beurre demi-sel fondu. Mélangez bien.
Versez la moitié de cette mixture dans un emporte pièce carré plus grand d’1cm que la base du chavroux. Mettez sur une plaque garnie de film étirable. Faites de même pour le deuxième sablé.
Versez un chavroux dans un récipient.
Coupez une figue en morceau.
Versez le sucre glace et les figues dans le chavroux et mélangez soigneusement. Je mets bien 45g de figues par chavroux de 150g, pas plus car sinon le tout ne tient pas après le démoulage.
Reversez le tout dans la boite du chavroux en faisant attention de ne pas avoir de bulle d’air sur les côtés.Faites la même chose pour le deuxième chavroux. Mettez en suite au congélateur.
Posez le cheescake figue chavroux sur un sablé reconstitué, démoulez en pressant le moule sur deux côtés opposés, puis mettez au frais jusqu’à complète décongélation.
Le tout devient bien crémeux et onctueux à souhait. N’hésitez pas à décorer à l’envie !
