En été, il n’y a rien que j’aime plus que les fruits. Je suis un fou de melons, d’abricots, de pêches juteuses et sucrées. Je pourrais littéralement en dévorer des kilos ! Mais lorsque quelques unes de ces dernières me font l’affront d’être pâteuses et plus fades, je les mets direct au mixeur pour leur réserver le sort qu’elles méritent: les transformer en gâteau ! J’ai fait celui-ci à l’instinct. De la poudre d’amande pour absorber l’humidité des fruits, du chocolat et du beurre… Et là de nouveau, j’ai pu manger mes pêches et ainsi consommer mes 5 fruits/légumes par jour. Ouf !! Sauvé ! Le résultat? Un cake moelleux, humide (il est bel et bien cuit !) et riche. À mi-chemin entre un pain au chocolat et aux amandes (cela m’a rappelé le goût) et le financier, tout cela avec un goût subtil de pêches.
Épluchez les pêches et mettez-les au mixeur. N’oubliez quand même pas d’enlever le noyau, ça risque de craquer sous la dent…
Réduisez-les en purée puis versez celle-ci dans un récipient avec les œufs et la cassonade.
Versez la poudre d’amande.
Mélangez puis versez la farine mélangée à la levure chimique.
Faites fondre le beurre et versez-le dans la pâte. Un dernier petit tour de fouet et c’est bon !
Il reste juste le chocolat en chunks. Vous pouvez bien évidemment prendre des pépites ou alors couper une tablette en petits morceaux.
Versez dans un moule de 24cm de long garni de papier sulfurisé (une bande dans un sens et une deuxième dans l’autre). Versez la pâte.
Faites cuire à 160 degrés près de 50 minutes. Surveillez bien la cuisson et adapatez-la à votre propre four. Comme pour le quatre-quarts (recette ICI), j’ai mis les 20 dernières minutes en fonction vapeur.
Vous aurez un cake délicieusement doré qui sent très bon !
Laissez-le refroidir complètement avant de le déguster. Il sera meilleur le lendemain conservé au réfrigérateur dans un film étirable.
