Voici un grand classique de la cuisine américaine! Datant de la fin du XIXème, probablement de Chicago, c’est une sorte de gâteau au chocolat sans levure, donc assez plat et légèrement sous-cuit. Coupé en carrés, le brownie est délicieux et fondant en bouche. Je vous propose une recette de brownie très inhabituelle, avec du cacao en poudre et un beurre noir. Sa texture est parfaitement moelleuse et dégage des parfums de noisettes. Une recette à essayer d’urgence!
Commenter par mettre les beurres dans une casserole sur feu modéré.
Laisser fondre et bouillir le beurre.
Quand le beurre commence à mousser sans faire de bruit, sortir la casserole du feu. Le beurre est devenue « noisette ». Si le fond de la casserole est un peu grillé (pas brûlé!!), c’est même meilleur.
Peser ensemble le cacao en poudre et le sucre.
Les ajouter dans la casserole (hors du feu).
Mélanger vivement avec un fouet.
Ajouter les deux cuillerées à café d’eau et celle de vanille liquide.
Mélanger vivement puis laisser refroidir 5 minutes. Au bout de 5 minutes, ajouter les oeufs un par un tout en mélangeant à chaque fois.
Quand le mélange est bien lisse, ajouter la farine.
Mélanger puis mettre les noix.
Verser la pâte dans un moule carré de 21 sur 21 garni de papier sulfurisé. Je vaporise également de la bombe de démoulage anti-adhérente.
