Voici une recette toute simple de petits gâteaux secs aux noisettes, sans beurre. Je les appelle « biscuits », même si ils ne sont pas cuits deux fois. Comme ils n’ont pas de matière grasse, ils sont plus cassants que des sablés, mais ils sont du coup parfaits avec le café et se conservent très longtemps en boite hermétique.
Mettez les noisettes entières dans un mixeur pour les réduire en poudre très grossière.
Versez cette poudre dans un récipient avec le sucre et la poudre de noisette.
Versez la farine et la levure chimique.
Ajoutez le blanc d’œuf (il faut peser).
Mélangez pour réunir la pâte en boule.
Étaler la pâte au rouleau sur 1cm d’épaisseur.
Coupez des bandes dans la pâte dans un sens et dans l’autre pour réaliser des petits biscuits.
Mettez les petits bouts de pâte sur une plaque à pâtisserie garnie de papier sulfurisé. Refaites une boule avec les chutes de pâte pour étaler et couper de nouveau.
Mélangez le lait et le sucre glace et passez la dorure au pinceau.
Faites cuire 30 minutes à 170°C. Les biscuits doivent être bien dorés.
