Trois Tartelettes fraîches individuelles garnies de mascarpone chantilly, de fraises, de crème verte et de zeste de citron vert sur une surface sombre.

De belles tartelettes aux fraises, avec une crème au basilic et chocolat blanc, surmontées d'une chantilly au mascarpone et citron vert !

  • Pour les sablés bretons :
    Pour le pas à pas en photos, vous pouvez aller voir ma recette de traou mad ICI ! Mélangez ensemble le beurre et le sucre au robot jusqu’à avoir une sorte de crème. Versez alors le jaune d’œuf et le lait entier.
  • Mélangez de nouveau, versez la farine et la levure chimique, puis mélangez sans insister, juste pour que la pâte soit homogène. Mettez la pâte entre deux feuilles de papier sulfurisé et étalez sur une épaisseur de 6 mm. Laissez reposer au frais pour faire durcir la pâte.
  • Préchauffez le four à 200 °C. Coupez la pâte avec des cercles préalablement enduits , d’une très fine couche de beurre ou de graisse de démoulage en bombe.
  • Disposez sur une plaque à pâtisserie garni de papier sulfurisé.
  • Faites cuire 18 à 20 minutes.
  • Décerclez les sablés et laissez refroidir.
  • Pour le crémeux basilic :
    Placez la crème, le lait et le basilic dans une casserole, faites frémir pendant 2-3 minutes, puis mixez avec un mixeur plongeant le plus finement possible. Vous ne devez presque plus voir de morceaux de feuilles de basilic . Passez dans un tamis au besoin.
  • Faites chauffer sur feu doux avec le beurre.
  • Placez les jaunes pesés, le sucre et la maïzena dans un récipient. Mélangez au fouet pour blanchir le plus possible. Cela ne va pas blanchir énormément car il n’y a pas beaucoup de sucre.
  • Quand le contenu de la casserole frémit, versez sur les jaunes.
  • Mélangez soigneusement avec un fouet. Remettez sur feu doux et portez à ébullition tout en mélangeant.
  • Hors du feu, ajoutez le chocolat blanc coupé en morceaux.
  • Reversez dans un récipient propre. Filmez au contact pour éviter le dessèchement, laissez refroidir à température ambiante, puis placez au frais.
  • Détaillez les fraises.
  • Fouettez la crème au basilic jusqu’à ce qu’elle soit bien lisse.
  • Puis pochez-la sur les sablés bretons. J’ai pris une douille de 8mm.
  • Disposez les fraises sur la crème basilic.
  • Chantilly citron vert :
    Fouettez ensemble les ingrédients de la chantilly pour avoir une belle crème aérée.
  • Terminez avec la chantilly au citron vert. Je l’ai pochée avec une douille cannelée.
  • Vous pouvez ajouter du zeste de citron vert fraichement râpé pour une touche de couleur.
  • Mettez les tartelettes au frais pendant au moins 2 heures. Elles se conserveront facilement 3 jours au frais, à l’abri des odeurs (dans une boite hermétique !).
