Sablés croustillants fourrés à la pâte de pistache
J’ai acheté l’autre jour un pot de pâte de pistache, alors que d’habitude je la fais maison. Allez savoir ce qui m’a pris ce jour-là ! Au final, j’ai utilisé cette pâte pour en faire des sablés croustillants, légèrement décadents ! Le résultat est beurré à souhait, bine réconfortant, surtout au moment du goûter. De plus, ces gâteaux sont très simples à réaliser à la maison.
Pesez des boulettes de 15g de pâte de pistache. Faites-en 14 au total. Mettez la pâte au frais au besoin avant de faire les boulettes, puis conservez les boulettes au réfrigérateur le temps de faire la pâte.
Versez le sucre roux, le sucre, l’intérieur d’une gousse de vanille et le beurre demi-sel dans la cuve de votre robot muni de la feuille, ou dans un récipient.
Mélangez jusqu’à avoir une consistance de crème, ajoutez alors les 50g d’œuf.
Mélangez puis versez la farine.
Mélangez juste assez pour obtenir une pâte homogène. Ne mettez pas au frais !
Pesez 35g de pâte. Étalez-la en une disque plat à la main. Posez une boulette de pâte de pistache au centre, puis refermez la pâte autour.
Faites de même pour tous les sablés. Aplatissez les sablés légèrement à la main et posez-les sur une plaque à pâtisserie garnie de papier sulfurisé.
Vous pouvez ajouter des pistaches décortiquées sur le dessus de chaque sablé.
Faites cuire 40 minutes sur dans un four préchauffé à 160°C sur chaleur tournante. Faites les refroidir sur une grille avant de les conserver dans une boite hermétique.
