Je suis un peu dingue de maki, onigiri, onigirazu, mais je suis la plupart du temps très déçu (sauf de temps en temps). C'est pourquoi je préfère les faire à la maison, car je suis sûr de ne pas avoir une tonne de riz surcuit et trop vinaigré. Ici, je gère tout comme j'aime. Le riz est en parfaite adéquation avec l'intérieur riche et savoureux. Je mets ici du poulet avec une sauce yakitori, et un soupçon de cream cheese pour casser le côté un peu sucré de la viande. Ces onigiris se conservent 3 jours au frais et se dégusteront avec une simple sauce soja !
Lavez votre riz dans un tamis fin à l’eau froide pendant 1 minute. Égouttez-le bien, puis versez-le avec les 385g d’eau dans le rice cooker. Mettez-le en route, puis dès que le bouton saute, débranchez la machine et laissez reposer avec le couvercle pendant une heure. Après ce temps, ajoutez le vinaigre à sushi dans le riz qui est encore à ce stade bien chaud. Profitez de la cuisson pour préparer ce vinaigre en mélangeant tout dans un bol jusqu’à ce que le sucre soit parfaitement dissous.
Mélangez bien le riz avec le vinaigre à sushi et laissez maintenant reposer à nouveau le riz jusqu’à ce qu’il soit tiède.
Pour le poulet, prenez deux hauts de cuisses avec la cuisse (ici il n’y en a qu’un). Enlevez la peau et désossez le tout. Coupez la viande en morceaux.
Versez la viande coupée dans un bol at ajoutez deux trois cuillerées à café de sauce yakitori. C’est à vous de voir pour la quantité.
Quand le riz a tiédi, ajoutez deux cuillerées à soupe de furikaké (c’est facultatif). Mélangez soigneusement.
Prenez 3 feuilles d’algue nori. Coupez le haut de la feuille sur une bande de 5cm.
Coupez le reste en 4. Ce sont ces morceaux qui vont nous servir pour les onigiris.
Pour un moule à onigiri classique, je mets 70g de riz en tout. 45g pour le fond, puis 25 pour le « couvercle ». Mettez 45g de riz dans le moule.
Répartissez-le de façon à créer un petit réceptacle. Ajoutez du poulet sauce yakitori. Mettez une petite noix de cream cheese. Remettez un peu de poulet.
Terminez avec 25g de riz pour former le couvercle.
Fermez le moule et serrez légèrement.
Démoulez l’onigiri et posez-le au milieu d’une bande de feuille coupée de nori. Remontez les bords. Faites de même pour tous les onigiris.
Ces onigiris, peuvent se conserver 3 jours au réfrigérateur emballé individuellement dans du film étirable. Un délice avec un peu de sauce soja.
