Ne vous fiez pas à son apparence rustique ! Ce plat est à tomber ! Avec pourtant très peu de cèpes, ce plat est explosif en saveurs. Je vous conseille de le préparer la veille, car je l'ai trouvé encore meilleur le lendemain, surtout pour réaliser de belles parts. Ce gratin sera parfait pour accompagner une viande grillée, comme un magret de canard, une omelette ou une salade. Une façon originale et délicieuse de préparer la courge butternut. Et pourquoi pas pour le repas de Noël !
Commencez par versez de l’eau bouillante sur les cèpes séchés et laissez-les s’hydrater pendant 15 minutes.
Épluchez et coupez l’oignon, ajoutez les gousses d’ail épluchées et écrasées au presse-ail et 4 cuillerées à soupe d’huile d’olive.
Laissez mijoter 5 à 10 minutes sur feu modéré en remuant régulièrement. Ajoutez alors les cèpes avec l’eau de trempage (en faisant attention à ne pas verser l’éventuel sable au fond du récipient). Peu importe la quantité d’eau, on va laisser le tout s’évaporer. Ajoutez le cube de bouillon.
Laissez cuire jusqu’à ce que le jus soit presque totalement évaporé.
Versez la crème liquide. Salez et poivrez à votre goût.
Mixez le tout avec un mixeur plongeant (ou dans un blender). Vous pouvez goûter la sauce à ce stade qui est un délice total !
Épluchez la courge butternut, enlevez les graines.
Commencez le montage dans un plat à gratin adapté au volume de la courge. Vous ferez le montage en trois fois environ. Mettez donc un tiers de la courge dans le plat, salez et poivrez.
Versez la crème par dessus la courge.
Remettez un tiers de la courge, sel et poivre, et reversez la crème aux cèpes. Continuez de la même façon jusqu’à ras du bord. Si il reste de la crème, vous pourrez la manger avec un viande grillée par exemple.
Faites cuire le gratin sur une plaque à pâtisserie à 180°C, d’abord recouvert de papier aluminium pendant 1 heure, puis sans le papier pendant 20 minutes.
Laissez tiédir avant de couper en parts et de servir avec l’accompagnement de votre choix (viande, omelette, salade etc.).
