J'ai vu cette recette au menu d'un restaurant et je me suis dit que c'était une excellente idée ! La couche de sucre caramélisé ne dérange absolument pas et donne un contraste très agréable avec l'intérieur richement parfumé. Une jolie idée de recette pour une entrée réconfortante au cœur de l'automne !
Coupez-le tranches, après l’avoir vidé de ses graines. Posez les tranches sur une plaque à pâtisserie garnie de papier sulfurisé. Ajoutez un oignon épluché et coupé en morceaux, les gousses d’ail épluchées. Arrosez généreusement d’huile d’olive, salez et poivrez.
Faites cuire 45 minutes à 170°C.
Enlevez la peau du potimarron cuit (c’est plus facile que cru).
Versez le reste de la plaque (chair, oignon, ail, huile) dans un blender avec la la crème, l’œuf et les jaunes. Salez et poivrez à nouveau. Le contenu cuit de la plaque pesait 650g avant de mettre la crème et les œufs.
Mixez soigneusement. Enlevez la peau du chorizo et coupez-le en petits morceaux.
Faites-le revenir à la poêle sur feu modéré pour qu’il devienne joliment coloré.
Divisez dans quatre ramequins à crème brûlée.
Versez par dessus la crème au potimarron.
Faites cuire 20 minutes à 155°C. Laissez tiédir, puis saupoudrez de sucre semoule.
