Cette tarte est un avant goût des fêtes de Noël qui approchent à grands pas. J’y ai mis des figues séchées, du zeste d’orange, de la cannelle, des noix, du miel et du beurre. Tout un programme ! Tout cela dans une délicieuse pâte sucrée. Rien de compliqué dans cette recette, et comme toujours depuis un moment, je sucre beaucoup moins, tout en gardant une texture moelleuse.
Commencez par préparer la pâte sucrée. Vous n’aurez besoin que de la moitié de la pâte, mais elle est plus facile à préparer en entier. Vous pourrez congeler l’autre moitié ! Mettez tous les ingrédients sauf l’œuf dans un bol ou dans le bol du robot.
Battez avec la feuille du robot (c’est le K) jusqu’à incorporation du beurre. Le tout ressemble à du sable. Ajoutez à ce moment l’œuf battu.
Remettez en marche juste pour incorporer l’œuf battu mais pas plus ! Placez la pâte dans un film étirable et mettez-la au frais pour une heure.
Sortez la pâte du réfrigérateur. Farinez-la légèrement et placez-la sur un morceau de papier cuisson (c’est plus facile !). Commencez à l’étaler au rouleau.
Mettez un morceau de papier cuisson dans le fond du moule. J’ai pris un moule à fond amovible pour plus de facilité. Prenez un moule de 20cm ou 22. Cela changera juste l’épaisseur de la crème. Mon moule à tarte que j’utilise pour cette recette est assez haut. Placez la pâte sur le moule. Garnissez-le bien (foncez-le) de pâte. Enlevez l’excédent de pâte au rouleau ou au couteau.
Hop c’est prêt, piquez juste la pâte à la fourchette.
Faites cuire la pâte à 180°C pendant 15 à 20 minutes.
Pour la garniture : coupez les figues séchées en petits morceaux.
Versez dans une casserole avec le jus d’orange, le zeste d’orange, la cannelle et la vanille. Faites chauffer sur feu doux.
Laissez bouillir jusqu’à ce que le jus soit absorbé.
Ajoutez alors le sucre, le miel, les noix et le beurre.
Mélangez toujours sur feu doux. Coupez le feu, puis laissez tiédir. Versez les œufs et mélangez.
Versez le tout dans la tarte précuite.
Faites cette fois cuire à 165°C pendant 30 à 40 minutes. Le centre doit trembloter légèrement.
Laissez tiédir avant de démouler sur une grille, puis dégustez la tarte refroidie.
