Une recette vraiment très facile à faire pour la saison des fêtes de fin d'année. Une fine tartelette croustillante garnie de vinaigre balsamique et de poire en fines tranches, le tout surmonté de tranches de foie gras poêlé. Je recommande la pâte feuilletée maison (il m'en reste toujours dans le congélateur de mes cours de cuisine), mais je comprendrais que vous l'achetiez toute faite, prenez-en une de qualité dans ce cas !
Épluchez et coupez les poires en quartiers, puis en fines tranches.
Étalez la pâte feuilletée sur 3mm d’épaisseur (ici la pâte qui me reste de mes ateliers pâte feuilletée) et coupez des cercles de 12cm de diamètre. Posez les ronds de pâte sur un tapis de cuisson sur une plaque à pâtisserie ou un papier sulfurisé. Piquez la pâte à la fourchette puis mettez un peu de crème de vinaigre balsamique.
Ajoutez les tranches de poires en une fine couche.
Enfournez et laissez cuire à 190°C sur chaleur tournante pendant 40 minutes. 5 minutes avant la fin de cuisson, faites cuire les tranches de foie gras, dans une poêle sur feu modéré à soutenu. Salez et poivrez à votre goût. Laissez cuire deux minutes à peine de chaque côté pour bien dorer le foie gras.
Posez deux tranches par tarte.
Vous pouvez aussi ajouter un peu de roquette et de vrai balsamique cette fois. À déguster bien chaud !
