Une petite recette ultra simple et fraiche, nous venant de Scandinavie ! Je vous propose les mini concombres marinés, qui seront parfait une fois égouttés, en apéritif ou en accompagnement. Il y a ici la version traditionnelle à l’aneth et aux baies roses, ou la version d’une amie, Elvire qui a accepté de partager avec nous ses proportions de marinade et son petit twist absolument délicieux au poivre de Sichuan et à l’estragon. N'hésitez pas à varier les herbes et épices !
Commencez par laver et couper en morceaux les mini concombres.
Dans un récipient, versez l’eau, le vinaigre blanc, le sucre et le sel. Mélangez bien jusqu’à ce que le sucre et le sel soient bien fondus (ce qui n’est pas le cas sur la photo).
Placez les tranches de concombres dans des bocaux. Pour la recette traditionnelle, versez des baies roses, pour la version d’Elvire, le poivre de Sichuan.
Effeuillez 4-5 branches d’estragon pour la version au poivre de Sichuan. Pour l’aneth, il suffira de finement ciseler 2-3 branches.
Placez l’aneth avec le pot contenant les baies roses, et l’estragon avec le poivre de Sichuan (ou vice versa). N’hésitez pas à concasser grossièrement les baies roses (chose que je n’ai pas faite ce jour là !).
Remplissez avec l’eau sucrée vinaigrée à ras bord.
Fermez les pots puis laissez mariner toute une nuit au frais.
Il ne reste plus qu’à déguster bien frais et égoutté en accompagnement, ou simplement à l’heure de l’apéritif !
