Depuis quelques temps, je baisse drastiquement le sucre dans mon alimentation. Je continuerai cependant à vous proposer des recettes classiques, et d'ailleurs mon prochain livre risque de surprendre un petit peu (je l'espère !). Je vous parle bientôt ! Pour ces cookies avoine cacahuètes, j'ai pour la première fois utilisé de l'érythritol, un édulcorant dit "de masse". Son nom fait un peu peur, mais c'est comme si on utilisait les noms chimiques des ingrédients (saccharose, glucose etc.). "De masse" car ce n'est pas comme l'aspartam, il s'utilise dans mes mêmes proportions que le sucre classique. J'ai donc fait ces cookies avec, et en ne mettant non pas de farine du tout. Il y a juste un peu de flocons d'avoine et du chocolat noir à 70%. Pour les gourmands invétérés, il y a plein plein de recettes de cookies riches et bien décadents à souhait sur mon site !
Versez la purée de cacahuète sans sucre et les œufs dans un récipient.
Ajoutez l’érythritol et la cacahuète en poudre.
J’ai mis les ingrédients dans le désordre, car je composais la recette à l’instinct… Ajoutez la vanille liquide. Le chocolat, le sel, le bicarbonate et les flocons d’avoine.
Mélangez bien, puis faites des boulettes de 60g. Aplatissez-les un petit peu avec vos mains.
Faites cuire 15 minutes dans un four préchauffé à 170°C sur chaleur tournante.
