Je le précise d'office, ce pain n'est pas une de mes recettes ! Je l'ai bien sûr fait pour les photos, mais aussi surtout pour l'avoir définitivement dans mon site où je cherche parfois moi-même des recettes ! On trouve ce pain qui tourne pas mal sur internet et une amie, Gaëlle, me l'avait fait une fois. Coup de foudre immédiat pour ce pain naturellement sans gluten, à la tenue parfaite, excellent grillé au grill-pain avec du beurre ou tel quel. Il est surtout ultra facile à faire, il est prêt à passer au four en 5 minutes. C'est presque un gâteau tellement c'est bon. C'est un délice absolu et je me le fais pour le petit déjeuner depuis plusieurs semaines déjà ! À faire et refaire.
Placez les petits suisses, le fromage blanc (ou le skyr, ou que du skyr) et les œufs dans un récipient. Ajoutez les flocons d’avoine, le sel et la levure chimique.
Hachez les fruits secs choisis (noix, amande, noisettes, noix de pécan, noix de cajou etc.) grossièrement au couteau.
Ajoutez les fruits secs et mélangez bien.
Vous avez deux options. L’une consiste à faire cuire le pain dans un moule à cake d’environ 25cm de longueur, chemisé de papier sulfurisé.
Parsemez avec les 50g de graines restantes sur le dessus.
Faites cuire 1h à 175°C sur chaleur tournante.
L’autre méthode plus simple, consiste à façonnez le pain en vous aidant d’une spatule, directement sur une plaque à pâtisserie garnie de papier sulfurisé.
Parsemez de graines de la même façon.
Puis faites cuire 1h à 1h10 à 175°C.
Dans tous les cas, le pain se tranchera parfaitement et sera tout autant délicieux tel quel, ou avec du salé ou du sucré !
