Pour cette recette, prenez des abricots bien mûrs et du romarin frais. Pour le nombre d’abricots, tout dépend de la taille de votre plat. Pour information, j’ai fait les photos du clafoutis en réalisant la moitié de la recette.
Mettez le beurre demi-sel à fondre dans une poêle.
Dénoyautez les abricots en les coupant en deux.
Placez-les dans la poêle sur feu modéré. Ajoutez un peu de romarin finement haché et versez la cuillerée de miel.
Laissez cuire de chaque côté. À la fin, augmentez le feu pour assécher un peu le sirop.
Pour la pâte, mettez le sucre et les œufs dans un récipient et fouettez bien.
Ajoutez la poudre d’amande et la farine. Mélangez soigneusement.
Versez la crème et la farine et fouettez pour avoir une pâte bien homogène.
Versez dans le plat utilisé, préalablement beurré.
Versez la ricotta dans un petit récipient. Ajoutez le zeste finement râpé de citron, puis mélangez bien.
Placez les abricots dans le plat puis disposez la ricotta par cuillerée à café de façon aléatoire.
Parsemez d’amandes effilées puis de quelques feuilles de romarin.
Faites cuire 50 minutes à 175°C sur chaleur tournante.
Servez les parts de clafoutis tiédi avec un peu de miel (de lavande par exemple).
