Cuisson des œufs :Faites cuire les œufs à l’eau bouillante, pendant 11 minutes. Quand l’eau frémit, posez-les délicatement à la cuillère, augmentez le feu, puis comptez les 11 minutes à la reprise de l’ébullition.
Dès que les œufs sont cuits, jetez l’eau bouillante en laissant les œufs dans la casserole. Secouez la casserole pour briser légèrement la coquilles des œufs, puis versez de l’eau froide. De cette façon, ils seront très facile à écaler.
Pour la mayonnaise :Versez le jaune d’œuf, la moutarde et un peu d’huile prélevée sur les 130ml. Salez et poivrez.
Mélangez au fouet (ici électrique) pour bien disperser le jaune et amorcer l’émulsion.
Versez le reste de l’huile en filet, très doucement, toujours en fouettant de façon bien homogène.
Écalez les œufs durs refroidis, puis coupez-les en deux. Prélevez les jaunes. Écrasez à la fourchette 6 jaunes sur les 8.
Ajoutez les 6 jaunes écrasés dans la mayonnaise et mélangez bien.
Mettez la mayonnaise dans une poche munie d’une douille assez large et cannelée. Répartissez en remplissant toutes les moitiés des blancs d’œufs durs.
Parsemez avec les 2 jaunes durs écrasés, puis d’un peu de feuilles de ciboulette et/ou de persil finement ciselée(s). Poivrez puis mettez au frais 1 heure avant de servir.
