Não julgue a receita pela sua aparência e vá vê-la passo a passo, porque deste ponto de vista, parece uma gloubiboulga! Este prato é de facto muito bom e equilibrado. A meio caminho entre a papa e o risoto, a sua cozedura é simplificada porque o líquido é deitado de uma só vez. Tudo está pronto em 20 minutos. Faço-as frequentemente em casa e como já não como muita carne, a receita é perfeita, muito fácil de fazer e pode ser comida com uma colher!
Receita para 3/4 pessoas:
50g de trigo sarraceno
130g de quinoa
3 pequenas chalotas
3 boas colheres de sopa de azeite de oliva
525ml de caldo de vegetais
1 colher de chá de caril em pó
1/2 colher de chá de paprica
1/4 colher de chá de chilli em pó
sal de ervas (ou sal normal)
200g de edamame (em mercearias asiáticas, ou substituir por ervilhas)
20g de sementes de girassol
alguns raminhos de coentros
Cozinharemos a quinoa e o trigo sarraceno juntos. Basta lavá-los com uma pequena peneira.
Cortar finamente as chalotas.
Em lume brando, deitar o azeite e as chalotas.
Deixar cozinhar, mexendo ocasionalmente, até que as chalotas fiquem um pouco castanhas.
Em seguida, adicionar a quinoa/ trigo sarraceno,
Verter todo o caldo de vegetais.
Adicionar as especiarias: caril, pimentão e chilli.
Levar a uma fervura baixa. Após 9 minutos de cozedura, deitar no edamame. Pode substituí-los por ervilhas, por exemplo!
Salguei aqui com sal de ervas e vegetais frescos. Tenho sempre algum no meu armário e encontro-o nas lojas de produtos orgânicos!
A coisa toda vai inchar.
Quando a maior parte do stock for absorvida, adicionar os coentros finamente cortados e as sementes de girassol.
