Estas pequenas tartes são realmente deliciosas! Uma massa fina e estaladiça com um recheio firme e derretido creme de chocolate, uma maravilha pura! A minha versão é simples de fazer e dou-vos aqui a minha técnica de “saco de farinha” que é perfeita para fazer uma base de pastelaria doce!
Receita de “Tarte de Chocolate” para 6 pessoas:
Massa doce:
-210g de farinha
-125g de manteiga mole em pedaços
-25g de pó de amêndoa
-50g de ovo batido
-1 pitada de sal
-35g de açúcar de confeiteiro
Creme de chocolate:
-260g de 65% de chocolate preto (Valrhona manjari)
-100g de chocolate de leite (uso o clássico Lindt para as suas notas caramelizadas!)
-210g de creme completo
Preparar a massa doce:
Colocar a amêndoa em pó, o açúcar em pó, a farinha, o sal e a manteiga na tigela da batedeira.
Misturar a mistura para incorporar a manteiga com o “k” do processador de alimentos. Ou à mão!
Adicione o ovo batido com antecedência e misture apenas para o incorporar, mas não mais!
Colocar uma bola de massa sobre um pedaço de papel vegetal e colocar um segundo pedaço de papel em cima dele. Espalhe com o rolo sem adicionar farinha, tudo fica limpo!
Estender a massa de forma bastante fina e alinhar círculos de tarte de 8 cm, certificando-se de pressionar firmemente a massa contra o fundo do círculo. O ângulo certo deve ser perfeito!
Corte o excesso de massa com uma faca à volta do círculo!
Faça o mesmo para todos os círculos! Picar a base de pastelaria com um garfo em todos os círculos. Depois colocar uma folha de papel celofane(SPECIAL MICRO-ONDE BAKING!!) em cima da massa.
Encher com farinha, embalar para encher o fundo em ângulos rectos!
Deixar a mistura sobre um tabuleiro forrado com papel vegetal num local fresco durante uma hora.
Pré-aquecer o forno a 180°C.
Cozer durante 15 minutos a 180°C com o saco de farinha, e depois retirar o saco simplesmente puxando-o para cima. Retirar todos os sacos desta forma.
Cuidadosamente remover também as bases de pastelaria. Devolver as bases de pastelaria ao forno durante 15-20 minutos, mantendo-as debaixo de olho.
O resultado é uma base de massa pronta a ser recheada com um delicioso creme de chocolate!
Se fez bem o trabalho, pode ver o ângulo certo!
Em seguida, preparar o creme de chocolate. Colocar todos os ingredientes numa tigela e aquecer no microondas em incrementos de 1 minuto ou em banho-maria.
Como há creme líquido, não há risco de queimar o chocolate no microondas. Misturar bem.
O resultado é um creme suave e brilhante!
Encher as bases de pastelaria com o creme de chocolate.
O creme tem bolhas nesta fase, pode espalhar o creme sacudindo e batendo as tortas com cuidado!
Arrefecer no frigorífico durante pelo menos 2 horas antes de comer!
