Esta é uma das minhas criações e esta tarte pode surpreender os seus convidados e provavelmente a si próprio! A fava tonka tem sabores de café, pistache, amêndoa, baunilha… A tarte é estaladiça com um rico e cremoso e misterioso! Pode, evidentemente, fazer crème brûlées com grãos de tonka em frascos, ou uma torta de crème brûlée com outros sabores, tais como café, pistachio ou baunilha.
Receita de “Tonka bean crème brûlée tart” para 4 pessoas:
Massa doce:
-210g de farinha
-125g de manteiga mole
-35g de açúcar de confeiteiro
-25g de pó de amêndoa
-50g de ovo
Creme de Tonka:
-5 gemas de ovo
-250ml de leite semi-desnatado
-250ml de creme completo
-80g de açúcar
-40g de leite em pó integral
-4 feijões tonka (+2 para decoração)
-1+1/2 folhas de gelatina
Preparar a massa doce:
Colocar a amêndoa em pó, o açúcar em pó, a farinha, o sal e a manteiga na tigela da batedeira.
Misturar a mistura para incorporar a manteiga com o “k” do processador de alimentos. Ou à mão!
Adicione o ovo batido com antecedência e misture apenas para o incorporar, mas não mais!
Colocar uma bola de massa sobre um pedaço de papel vegetal e colocar um segundo pedaço de papel em cima dele. Espalhe com o rolo sem adicionar farinha, tudo fica limpo!
O conselho de Bernard: Agora aqui está este novo truque para obter uma massa perfeita. É assim que muitos grandes chefes de pastelaria o fazem. Esqueça o método do feijão!
Colocar uma tira de película aderente e depois uma segunda tira num padrão cruzado. Aplicar o filme no famoso canto da massa.
Encha de farinha até à borda!
Depois fecha tudo como se fosse um pequeno saco. A massa está quase pronta para ser cozida COM o saco de farinha! Sim, não derreterá! A farinha vai até inchar, pressionando a massa contra a borda do círculo! Basta colocar tudo no frigorífico durante 30 minutos enquanto o forno aquece. Estes sacos são reutilizáveis e não derretem, desde que se utilizem sacos seguros para microondas!
Para aqueles que não querem, ainda há papel vegetal e feijões, que também funcionam muito bem.
Deixar repousar num local fresco enquanto o forno pré-aquece a 180°C.
Depois cozer durante 35 minutos ou até a massa estar cozida, porque quando o crème brûlée é cozido a 95°C, a massa não vai realmente cozinhar!
Retirar a massa do forno, retirando o saco de farinha. Deixar a massa no círculo.
Ajustar o forno a 95°C.
Este é o aspecto do feijão tonka quando vem da Guiana Francesa!
Coloque o leite, as natas e metade do açúcar numa caçarola. Rale os feijões tonka sobre esta frigideira.
Colocar em lume brando até ferver e deixar ferver durante 10 minutos.
Colocar as 5 gemas de ovos, a outra metade do açúcar e o leite em pó numa tigela. Não alvejar!
Reaquecer o leite infundido e verter sobre as gemas.
Coloque tudo de novo em lume brando e sem parar para mexer, leve a 85°C, por isso cozinhe como um creme de ovos!
Retirar do calor e adicionar a gelatina. Misturar bem.
Tensionar o feijão tonka através de uma peneira.
Verter para a base de pastelaria doce cozida (deixando o círculo ligado!!) e voltar ao forno a 95°C durante 1h15. Se houver demasiado creme, despeje o resto em ramequins e asse com a tarte! Tudo depende do tamanho do círculo escolhido.
Retirar do forno e deixar arrefecer completamente. Uma vez à temperatura ambiente, colocar no frigorífico durante pelo menos 3 horas.
Vinte minutos antes de servir, polvilhar a parte superior da tarte com açúcar e caramelizar com um maçarico. Voltar a colocar no frigorífico durante 15 minutos para recongelar as natas e o açúcar.
