Um amigo meu, Jean-Philippe, deixou-me uma vez provar estes biscoitos “orgânicos” de farinha de espelta e de pão de amêndoa. Eram de facto deliciosos. Perguntamo-nos como fazê-los… Por isso, apenas olhei para os ingredientes e as suas proporções e disse-lhe que ia fazer a receita exactamente igual. Está feito! Sabem a frangipano graças à adição de aroma de amêndoa amarga, não são muito doces e têm uma textura agradável graças à farinha de espelta de meia-pele… Experimente-os agora!
Estes pães curtos foram originalmente encontrados em lojas “orgânicas”. Olhando para o pacote, notei e a minha receita dá exactamente estes pães curtos ligeiramente espessos. Todos os ingredientes podem ser encontrados em lojas de produtos orgânicos, especialmente a farinha de espelta T110.
Receita para os pães curtos de amêndoa (para uma dúzia):
-200g farinha de espelta T110
-70g de açúcar de cana fino
-60g de manteiga mole
-20g de pó de amêndoa
-2 pitadas de flor de sal
-1 colher de chá de aroma de amêndoa amarga
-1 ovo de 55g
Esta é a farinha utilizada na receita. Pode encontrá-la em lojas de produtos orgânicos.
Colocar a farinha de espelta, açúcar de cana, manteiga, amêndoa em pó, sal e extracto de amêndoa amarga na tigela de uma batedeira.
Mexer bem para misturar a mistura. Não mais distinguir a manteiga. Acrescentar o ovo.
Misturar novamente para combinar e trazer a massa de volta para uma bola.
Estender a massa até uma espessura de 7mm e cortar os pães curtos com um cortador de biscoitos.
Colocar o pão curto sobre um tabuleiro forrado com papel vegetal e deixar arrefecer durante uma hora.
Aquecer o forno a 180°C e cozer os pães curtos durante 20 minutos. Esteja atento ao tempo de cozedura, porque como sempre, a duração depende da potência do forno! Depois deixar o pão curto arrefecer e endurecer numa prateleira.
