Este é um sorbet fresco e leve para terminar a refeição (ou fazer uma pausa). Eu tinha provado um sorbet semelhante em Banguecoque à hora do chá no “Salon des Auteurs” em L’Oriental (ver o relatório AQUI). É oferecido antes do prato de cupcake! A minha versão é muito limonada, com gengibre fresco para adicionar um pouco de zing à acidez da cal. Como uma sobremesa com alguns pães curtos, será perfeito!
Receita para um litro de sorbet de lima e gengibre:
-400ml (ou gramas) de sumo de lima (cerca de 12-13)
-3 centímetros de raiz de gengibre
-700g de xarope especial de sorvete de limão
Xarope especial de sorvete de limão:
-700g de açúcar
-500g de água
-6g de estabilizador de gelo (super neutrose)
Não entrem em pânico!!! Se não tiver super neutrose, pode fazer o que faz frequentemente, por substituindo por uma ou duas claras de ovo. Neste caso, não ter em conta a super neutrose. Mas ainda faça um xarope!
Colocar o açúcar e a super neutrose numa caçarola e misturar bem.
Acrescentar água fria.
Ferver a 104-105°C.
Verter o xarope para um recipiente com tampa e deixar arrefecer e amadurecer durante a noite.
No dia seguinte, o xarope é espesso e viscoso. É graças a isto que o sorbet terá uma textura agradável e não derreterá demasiado depressa.
No dia seguinte, colocar a raspa de duas limas num recipiente.
Espremer o sumo dos limões. Este é o mais longo e cansativo.
Verter para dentro do recipiente com a casca.
Descascar o gengibre. Com uma colher, é extremamente simples !
Depois ralar 3 ou 4 centímetros do mesmo. Tudo depende da força que se quer!
Adicionar o xarope de açúcar espesso e misturar bem. O sorbet está pronto!
Se não tiver super neutrose (que é muito útil!!), basta adicionar duas claras de ovo cru ligeiramente batidas neste ponto (para as tornar líquidas) e misturar bem.
Colocar numa máquina de gelados ou turbina.
Dentro de 20 minutos (dependendo do calor ambiente), o sorbet é definido.
Colocar numa lata de gelado e armazenar no congelador durante pelo menos 2 horas antes de comer.
