هنا شربات طازجة وخفيفة لإنهاء الوجبة (أو أخذ قسط من الراحة). كنت قد تذوقت مشروبًا مشابهًا في بانكوك في وقت الشاي في “Salon des Auteurs” في L’Oriental (انظر التقرير هنا ). يقترح قبل مهاجمة صينية الكب كيك! أقدم لكم نسختي الحامضة مع الزنجبيل الطازج الذي يضيف التوابل إلى حموضة الجير. للحلوى مع بعض كعكة الغريبة ، ستكون مثالية!
وصفة لتر من عصير الليمون والزنجبيل:
-400 مل (أو جرام) من عصير الليمون (حوالي 12-13)
-3 سم من جذر الزنجبيل
– 700 جرام من شراب البومي الخاص بالليمون
شراب عصير الليمون الخاص:
– 700 جرام سكر
– 500 جرام ماء
-6 جرام من مثبت الثلج (سوبر نيوتروز)
لا تصاب بالهلع!!! إذا لم يكن لديك نيتروسيس فائق ، فيمكننا القيام بذلك كثيرًا ، عن طريق بديل مع بياض بيضة واحدة أو اثنتين. في هذه الحالة ، تجاهل العدلات الفائقة … لكن ما زلت اصنع شرابًا!
نضع السكر والنيوتروز الفائق في قدر ونخلط جيداً.
أضف الماء البارد.
يغلي حتى 104-105 درجة مئوية.
يُسكب الشراب في وعاء بغطاء ويترك ليبرد وينضج طوال الليل.
في اليوم التالي ، يكون الشراب سميكًا ولزجًا جدًا. بفضله ، سيكون للشربات قوام لطيف ولن تذوب بسرعة كبيرة.
في اليوم التالي ، ضعي نكهة الحامضتين في وعاء.
اعصر عصير الليمون. إنه الأطول والأكثر إرهاقًا.
تصب في الحاوية مع الحماس.
قشر الزنجبيل. بالملعقة هو كذلك الى ابعد حد بسيط!
ثم صر 3 أو 4 سم. كل هذا يتوقف على قوة التي نتمنى!
نضيف شراب السكر السميك ويخلط جيدا. شربات جاهزة!
إذا لم يكن لديك نيوتروز فائق (وهو أمر مفيد للغاية !!) ، فقط أضف في هذا الوقت بياض بيض نيوتران مخفوقان قليلاً (لجعلهما سائلين) واخلطهما جيدًا.
ضع في صانع الآيس كريم أو التوربينات.
في 20 دقيقة (كل هذا يتوقف على الحرارة المحيطة) ، يتم ضبط شربات.
ضع صندوق ثلج في الثلاجة وخزنه لمدة ساعتين على الأقل في الفريزر قبل التذوق.
