Este é um sorbet realmente delicioso, especialmente quando feito com damascos frescos sazonais. Desta vez proponho uma receita de Lenôtre, do livro de culto “Faites vos glaces et votre confiserie comme Lenôtre”. Tenho este livro desde criança e ele sempre me fascinou! Esta receita é muito simples (como a maioria dos sorvetes) e não requer nenhum outro produto mundial (como trimolina, glucose atomizada, super-neutrose…).
Receita para um litro de sorbet de damasco:
-550g a 600g de damascos frescos -300ml de açúcar de cana líquido
Colocar os damascos sem caroço numa frigideira.
Adicionar o açúcar de cana líquido.
Deixar escalfar (cozinhar sem ferver) durante dez minutos.
Colocar o conteúdo da panela num liquidificador e misturar.
Verter de volta para a frigideira e deixar arrefecer completamente.
Quando o puré de damasco estiver à temperatura ambiente, colocá-lo num gelado ou numa máquina de gelados.
Colocar num frasco e deixar no congelador durante pelo menos 2 horas antes de servir. Se o sorbet tiver de ser guardado por mais tempo, tire-o para fora pelo menos 15 minutos antes de o comer!
