Este es un sorbete realmente delicioso, especialmente cuando se hace con albaricoques frescos de temporada. Esta vez propongo una receta de Lenôtre, del libro de culto «Faites vos glaces et votre confiserie comme Lenôtre». Tengo este libro desde que era niña y siempre me ha fascinado. Esta receta es muy sencilla (como la mayoría de los sorbetes) y no requiere ningún producto de otro mundo (como trimolina, glucosa atomizada, superneutrosa…).
Receta para un litro de sorbete de albaricoque:
-550g a 600g de albaricoques frescos -300ml de azúcar de caña líquida
Poner los albaricoques sin hueso en una sartén.
Añadir el azúcar de caña líquido.
Dejar escalfar (cocinar sin hervir) durante diez minutos.
Poner el contenido de la sartén en una batidora y batir.
Vuelva a verter en el molde y deje que se enfríe por completo.
Cuando el puré de albaricoque esté a temperatura ambiente, póngalo en una heladera o en una máquina de hacer helados.
Poner en un tarro y dejar en el congelador durante al menos 2 horas antes de servir. Si el sorbete se va a conservar más tiempo, ¡sácalo al menos 15 minutos antes de comerlo!
