No meu blog de culinária, tinha proposto várias receitas de carnes estaladiças. Estava a desejar esta opção vegetariana com cogumelos shiitake. Há algum tempo que não partilho convosco o segredo da fécula de tapioca que torna a fritura mais crocante. Aqui também faço um molho com hoisin, vinagre, açúcar e molho de soja. Combinado com amendoins crocantes e coentros, isto faz um prato muito perfumado e irresistível!
Recette des SHIITAKÉS CROUSTILLANTS SAUCE HOISIN pour 4 personnes :
250g de cogumelos shiitake
300g de farinha
420g de água
fécula de tapioca
Molho:
3 colheres de sopa de açúcar mascavado
2 colheres de sopa de molho de hoisin
2 colheres de sopa de vinagre branco
2 colheres de sopa de molho de soja transparente
8 colheres de sopa de água
2 colheres de chá de farinha de arroz
Para cozinhar :
2 colheres de sopa de óleo
2 dentes de alho
2cm de gengibre
2 punhados de amendoins assados sem sal
alguns raminhos de coentros
Instructions :
Comece por remover a base do shiitake. Depois deixamo-los inteiros!
Misturar a farinha e a água num recipiente e deitar a fécula de tapioca noutro. Mergulhar os cogumelos shiitake na pasta bastante líquida, drenar parcialmente e depois colocá-los no amido.
O amido irá cobrir a massa.
Fazer o mesmo para todos os cogumelos. Aquecer uma panela de óleo a 180°C. Agitar um pouco os cogumelos para remover o excesso de amido, depois mergulhá-los no óleo quente.
Devem ser bem coloridas para serem estaladiças.
Pode fritá-los uma segunda vez para obter uma estaladiça extra.
Para o molho: deitar o óleo, o alho e o gengibre no wok (ou caçarola). Calor a cor.
Misturar o resto dos ingredientes para o molho.
Verter para o wok e cozinhar enquanto se mexe.
O molho deve engrossar e tornar-se escorregadio.
Adicionar os cogumelos shiitake, revestir com o molho e cozinhar durante um ou dois minutos.
Adicionar a gosto amendoins assados não salgados. Basta cortá-los com uma faca!
Saltar para o wok.
Misturar novamente e servir imediatamente.
Também acrescento coentros picados e sirvo-os com arroz simples! Uma delícia!
