Claro que estas não são oficialmente rillettes, mas o nome para este tipo de preparação tornou-se, no entanto, comum. Sugiro esta versão muito simples para servir de entrada para as torradas.
Receita para rillettes de bacalhau :
350g de filete de bacalhau fresco
4 folhas de louro
300g de queijo Saint Môret
100g de creme duplo
1 colher de chá de vinagre de cidra ou sumo de limão
2 colheres de sopa de azeite de oliva
1 pequeno grupo de cebolinho
1 pequena chalota
sal, pimenta
Peça ao seu peixeiro para levantar os filetes de bacalhau, sem pele nem ossos.
Cozinhar em água a ferver com as folhas do louro durante 7 a 8 minutos.
Escorra bem e depois desfaça o peixe entre os dedos para verificar se não há espinhas.
Acrescentar o creme grosso e o Saint Môret.
Cortar finamente o cebolinho. Use o quanto quiser! Acrescentar azeite, vinagre de cidra ou sumo de limão.
Descascar e cortar finamente a chalota. Acrescentá-la às “rillettes”.
Adicionar sal e pimenta a gosto, misturar bem e refrigerar durante pelo menos 3 horas antes de servir.
