Desta vez, proponho uma receita de pequenos pães curtos salgados com tomilho e alecrim. São ideais para acompanhar aperitivos, com uma taça de vinho ou champanhe! Estes pequenos biscoitos de pão curto são tão crocantes como você gosta e ricos em azeite. Uma receita simples e despretensiosa, rápida de preparar e deliciosa para comer! O segredo do seu sucesso? A sua delicadeza. Saberão muito melhor se forem finos e estaladiços. Utilizo a técnica de pulverização que vimos no “Portsall buckwheat shortbread”.
Receita para os pães curtos do Sul (para cerca de trinta pães curtos finos):
-180g de farinha -70g de manteiga com sal -45g de azeite -1/4 colher de chá de sal -50g de queijo parmesão -1 ovo -1 colher de chá de rosmaninho seco -1 colher de chá de tomilho seco -Flor de sal
As instruções
Colocar o parmesão ralado, sal, ervas aromáticas, manteiga, azeite e ovo numa tigela e misturar bem para obter um creme.
Acrescentar a farinha de uma só vez.
Mexer até que a massa esteja lisa, mas não mais!
Pré-aquecer o forno a 190°C.
Pode fazer a forma que quiser. Utilizei a mesma técnica que para o “Portsall buckwheat shortbread”, ou seja, coloquei a massa numa pistola de biscoitos. Deixei descansar durante uma hora antes de cortar fatias de massa com um único entalhe. Mas pode-se usar qualquer técnica que se queira, basta fazer o pão curto suficientemente fino.
Polvilhar com ervas secas (usei novamente o alecrim).
Depois, alguma flor de sal. Aplainar muito ligeiramente o pão curto com a mão para embutir o sal e as ervas na massa.
Cozer durante 15 minutos a 190°C.
Deixe arrefecer num suporte de arame e desfrute como aperitivo!
