En esta ocasión, propongo una receta de pequeñas galletas saladas con tomillo y romero. Son ideales para acompañar los aperitivos, con una copa de vino o de champán. Estas pequeñas galletas de mantequilla son tan desmenuzables como quieras y ricas en aceite de oliva. Una receta sencilla y sin pretensiones, rápida de preparar y deliciosa de comer. ¿El secreto de su éxito? Su delicadeza. Sabrán mucho mejor si son finos y crujientes. Utilizo la técnica del spray que vimos en el «Portsall buckwheat shortbread».
Receta de shortbread sureño (para una treintena de shortbread finos):
-180g de harina -70g de mantequilla salada -45g de aceite de oliva -1/4 cucharadita de sal -50 g de queso parmesano -1 huevo -1 cucharadita de romero seco -1 cucharadita de tomillo seco -Flor de sal
Las instrucciones
Poner el parmesano rallado, la sal, las hierbas, la mantequilla, el aceite de oliva y el huevo en un bol y mezclar bien para obtener una crema.
Añadir la harina de una vez.
Remover hasta que la masa esté suave, ¡pero no más!
Precalentar el horno a 190°C.
Puedes hacer la forma que quieras. He utilizado la misma técnica que para el «Portsall buckwheat shortbread», es decir, he puesto la masa en una pistola de galletas. La dejé reposar durante una hora antes de cortar rodajas de masa con una sola muesca. Pero puedes utilizar la técnica que quieras, sólo tienes que hacer el shortbread lo suficientemente fino.
Espolvorear con hierbas secas (yo volví a utilizar romero).
Luego un poco de flor de sal. Aplastar el shortbread muy ligeramente con la mano para incrustar la sal y las hierbas en la masa.
Hornear durante 15 minutos a 190°C.
Dejar enfriar sobre una rejilla y disfrutar como aperitivo.
