Se alguma vez for a Portsall, no site Finistère norte, é pouco provável que encontre estes pequenos biscoitos de pão curto. Então porquê o nome? Simplesmente porque eu desenvolvi a receita nesta aldeia bretã! Portanto, hoje ofereço-vos esta receita de biscoitos. Queria reunir num único biscoito todos os ingredientes das panquecas e galetas bretões: trigo sarraceno, farinha branca, ovos, açúcar, manteiga salgada e leite. O resultado é surpreendente, pois raramente estamos habituados a encontrar bolachas doces feitas com farinha de trigo sarraceno , mas acho estes pães curtos totalmente viciantes! E é uma oportunidade de provar o sabor inimitável desta planta não herbácea.
Estes pães curtos serão melhores após 2 ou 3 dias numa caixa hermética!
Receita para as panquecas de Portsall:
-170g de açúcar
-80g de farinha
-170g de farinha de trigo sarraceno
-30g de leite em pó
-130g de manteiga semi-salgada
-1 ovo
-1 pitada de fermento em pó
Colocar a farinha branca, o fermento em pó e a farinha de trigo sarraceno numa tigela.
Numa tigela separada (ou na tigela de um processador de alimentos), colocar a manteiga semi-salgada, ovo, leite em pó e açúcar.
Comece a misturar bem para obter um creme.
Adicionar a mistura de farinha de uma só vez.
Misturar apenas o suficiente para tornar a massa homogénea sem trabalhar em demasia .
Para este passo, não há necessidade de usar um desentupidor de massa, mas quero apenas mostrar uma nova técnica para obter pães curtos idênticos. Isto pode ser usado para qualquer receita de cupcake. Coloco a massa numa pistola de pulverização, depois ponho a pistola no frigorífico durante pelo menos 1,5 horas.
Pré-aquecer o forno a 180°C.
Sem o êmbolo, pode simplesmente estender a massa e cortar com um cortador de biscoitos.
Pressione duas vezes para um biscoito.
Há então espessura suficiente.
Em seguida, cortar o excesso de massa com uma faca.
Colocar o pão curto sobre um tabuleiro forrado com papel vegetal. Se desejar, um padrão pode ser impresso na parte superior. Estes biscoitos vão saber tão bem com ou sem!
Este padrão de flores chinês (originalmente uma forma de bolo da lua) está muito no espírito bretão!
Cozer as bolachas durante 10-15 minutos a 180°C. Deixar arrefecer num suporte de arame e depois armazenar numa caixa hermética. Estes pães curtos serão melhores após 2 ou 3 dias numa caixa hermética!
