Primeiro deleite da minha experiência culinária no “Délice de la Casbah“. Gostaria de agradecer calorosamente a Fatiha que teve a amabilidade de partilhar comigo os seus conhecimentos e a sua deliciosa receita. Os “Montecaos” são bolos grandes, muito friáveis e arenosos. Podem ser mantidos por muito tempo porque não contêm ovos ou manteiga.
Receita para cerca de 60 montecaos:
-500g de farinha
-250g de óleo
-160g de açúcar de confeiteiro
-1/2 colher de chá de baunilha líquida
-1/2 levedura de saco
-65g de pó de amêndoa
Pré-aquecer o forno a 190°C.
Colocar a amêndoa em pó, o açúcar em pó e a farinha numa tigela grande.
Adicionar a baunilha líquida e o fermento em pó.
Começar a chuviscar no óleo enquanto se mexe.
Dependendo da farinha e amêndoas utilizadas, será necessário adicionar mais ou menos óleo, e deverá deixar de adicionar óleo assim que a massa possa ser junta.
Pegue num punhado de massa na palma da mão.
Enrolar numa bola entre as duas mãos.
Depois, ainda entre as duas mãos, formam uma espécie de “pião”, como se mostra abaixo. Tive um pouco de dificuldade no início para conseguir esta forma característica, mas finalmente consegui por enrolar as duas mãos , ou seja, enrolar as bolas rapidamente entre as duas palmas das copas (por oposição às mãos planas).
Acrescentar uma pitada de canela moída no topo de cada montecao.
Cozer a 190°C durante cerca de 30 minutos, mantendo um olho na temperatura
Armazenar num local seguro numa caixa. Os montecaos têm um longo prazo de validade, uma vez que não contêm ovos nem manteiga.
