Receita de carbonara de massa para 4 pessoas:
-400g de massa seca de trigo duro -1 ovo + 4 gemas -200g de pancetta -80g de queijo pecorino – pimenta preta
As instruções :
Esta é a pancetta e o verdadeiro pecorino. Se estes ingredientes não estiverem prontamente disponíveis, podem ser substituídos por banha de porco e queijo parmesão, como é frequentemente o caso nas receitas.
Pedi ao meu fornecedor italiano para cortar a pancetta em fatias de 100g. Desta forma, retêm alguma espessura. Cortar a pancetta em pedaços (o tamanho do bacon).
Fritar os pedaços de pancetta numa frigideira quente.
Começará a escurecer ligeiramente.
Quando a pancetta estiver cozinhada, remover o excesso de gordura. Limito-me a colocar uma toalha de papel à volta do fundo da panela para apanhar a gordura.
Raspar finamente o pecorino.
Colocar o ovo e as gemas numa tigela e bater com um garfo.
Adicionar duas ou três colheres de sopa de pecorino ralado.
E misturar bem.
Cozer a massa numa grande quantidade de água com sal a ferver. Basta cozinhá-los “al dente”, de acordo com as instruções da embalagem utilizada.
Drenar a massa, reservando 10cl da água de cozedura da massa.
Devolva-os à pancetta fora do calor, adicione a pancetta.
Ovos espancados. Se necessário, adicionar uma ou duas colheres de sopa de água de cozedura da massa.
Misturar bem e servir imediatamente.
Polvilhar com pecorino ralado e pimenta preta acabada de moer.
