Esta é uma receita perfeita e despretensiosa quando se quer preparar uma refeição para um bom dia de Verão e não passar horas na cozinha. A minha mãe e eu costumávamos fazer esta massa aos fins-de-semana para buffets ao ar livre há quase 30 anos e foi sempre um sucesso. Pode surpreender no início ter massa fria com molho, mas a combinação de salmão, endro e molho de cocktail caseiro é deliciosa e todos os convidados voltaram para se ajudarem a si próprios. Há anos que não faço esta massa, mas é um regresso à infância para mim!
Receita para 4 a 6 pessoas:
500g de tagliatelle
300g de salmão fumado
1 pequeno ramo de endro
Molho de cocktail :
1 ovo
180g de óleo
Vinagre de cidra de 10g
80g de ketchup
120g de creme completo
sal, pimenta
Cozinhe a sua massa al dente como indicado no pacote.
Depois colocá-los num escorredor e enxaguá-los em água fria para os arrefecer completamente. Em seguida, colocá-los num grande recipiente depois de os ter drenado.
Para esta receita, utilizar um bom salmão fumado.
Corte-a em fatias, do mesmo tamanho que a massa.
Coloque-o com a massa fria.
Para o molho, colocar o ovo, óleo e vinagre num recipiente alto e comprido. Adicionar sal e pimenta em quantidade suficiente.
Com um misturador de imersão, começar a misturar no fundo sem se mover. Quando o molho se põe (normalmente é instantâneo), mexa-o lentamente para emulsionar o óleo restante.
Todo o óleo deve estar bem regulado.
Verter o ketchup e as natas e misturar novamente.
Não deitar o molho todo necessariamente. Coloque uma boa metade e depois veja se quer mais ou não.
Acrescentar o endro finamente picado.
Misturar bem e servir imediatamente.
É claro que se pode colocar a massa no frigorífico, mas esta tende a absorver o molho. O molho será o mesmo, mas a aparência será um pouco menos cremosa.
