Após o sucesso doAssassin, o bolo que desenvolvi à base de caramelo e chocolate (que dá uma textura incrível se se usar o molde do tamanho certo!), pensei que um ganache para macarrões com o mesmo princípio seria interessante. Por isso provei-o e os macarrões são realmente deliciosos: um ganache de caramelo com sal quente derramado sobre o chocolate de leite. A textura é macia e quase como um carambar macio! Por isso, ao trabalho!
Receita de macaroons de chocolate-caramelo (para um bom de trinta macaroons recheados):
Fazer uma receita básica de macaroon. Todas as explicações são AQUI.
Colocar o açúcar, sal e xarope de glucose numa caçarola em calor moderado com um pouco de água.
Obter um caramelo bastante forte porque o creme irá aliviá-lo. Aqueça o creme no microondas, para evitar salpicos (o creme frio faria o caramelo enlouquecer!). Adicionar o creme lentamente, mexendo constantemente.
Reaqueça o creme para derreter todo o açúcar.
Verter o caramelo (que pode cair até 100°C) sobre o chocolate de leite.
Partir durante 30 segundos para permitir que o chocolate derreta.
Depois mexer suavemente com uma colher.
Filtrar o ganache em contacto (com película aderente directamente sobre o ganache) e deixar arrefecer completamente. Quando o ganache estiver mole (não a pingar) colocá-lo num saco com um bocal de 12mm.
Guarnecer as conchas de macaroon dois a dois
Como é habitual para os macaroons, coloque-os numa caixa hermética durante pelo menos 24 horas no frigorífico antes de os devorar!
