Já deve ter ouvido falar de kouign aman, um bolo delicioso do Finistère. Desta vez apresento-vos a sua versão em miniatura com framboesas! Um doce deliciosamente amanteigado com um centro suave de compota de framboesa. Para a ocasião, proponho uma nova versão de dobragem para esta massa que por vezes é difícil de estender (manteiga+açúcar!). Não há nada de complicado nisso, não se preocupe!
Receita para uma dúzia de kouignettes de framboesa
Stick: -260g de farinha -8g de levedura fresca -1 colher de chá de sal -135g de água quente Para a dunnage: -250g de manteiga com sal -230g de açúcar -100g de compota de framboesa (com sementes)
Comece por diluir a levedura fresca ou seca. Para fermento fresco, esmigalha-o primeiro!
Adicionar 50g de água morna e misturar bem para dissolver toda a levedura.
Adicionar o sal e a farinha e misturar bem. Depois adicione a água quente restante e misture bem, quer num processador de alimentos, ou à mão! Se tem uma máquina de pão , proceda como para um pão, mas no programa “massa levedada”!
Amassar a massa sobre uma superfície limpa como na receita de Riviólis de Xangai ! Colocar a massa numa tigela, desenhar uma cruz com uma faca na parte superior e cobrir com um pano limpo.
Deixar inchar durante pelo menos 1,5 horas.
Estender a massa para um rectângulo e envolvê-la em película aderente. Deixar de lado num local fresco durante uma hora. Estender a manteiga (ainda fresca) em película aderente até ao tamanho da massa.
Numa superfície de trabalho enfarinhada, começar a estender a massa de modo a que tenha o dobro do tempo que tinha no início. Colocar a manteiga (mole mas fresca, pois foi esmagada com um rolo) no centro.
Dobrar a massa sobre a manteiga.
Virar a massa em 90° e enrola-la.
Uma vez estendida, dobrar a massa em três. (volta dupla)
Colocar em película aderente e arrefecer durante 20 minutos.
Retirar a massa e dar-lhe uma volta dupla, enrolando-a e depois dobrando-a em três.
Colocar de lado no frigorífico por mais vinte minutos, e depois espalhar mais finamente. Polvilhar com açúcar.
Dobrar em terços e re-sugar com o açúcar não incorporado.
Não re-floresça a superfície de trabalho, use o açúcar para isso! Estender a massa uma última vez e depois espalhar a compota em metade da massa (não dois terços como mostrado na foto, mas metade!). Utilizo para a ocasião uma compota deliciosa da região de Léonard dos Monts d’Arrée.
Enrolar a massa numa bola bastante apertada.
Depois cortar em fatias. Colocar as fatias em latas de muffin . A receita é normalmente suficiente para fazer 12 kouignettes.
Cozer a 180°C durante 25 a 30 minutos, vigiando-o de modo a não queimar.
