Numa das minhas viagens a Banguecoque aprendi a cozinhar esta deliciosa entrada. Um bolo de arroz frito, portanto muito estaladiço, coberto com um recheio que lembra muito o molho satay, mas com camarão e carne de porco no interior. O contraste entre a crocância do arroz e a cremosidade deste molho doce e picante é realmente bem sucedido! A ser julgado com urgência.
Para encontrar os bolos de arroz, vá até ao 13º arrondissement de Paris. Tive dificuldade em encontrá-los na Tang, mas não houve problema na loja de Paris! É tudo para a informação! Aqui estão eles:
Receita para 2 pessoas:
-6 bolos de arroz secos 20g de camarão cru, descascado, picado 15g de lombo de porco picado -115ml de creme de coco -a raiz de coentros meio dente de alho -7 pimenta-pimenta branca -25g de açúcar mascavado -uma colher de chá de nuoc nam -uma colher de sopa de polpa de tamarindo -meia colher de chá de pasta de caril vermelho -35g de amendoins assados sem sal, grosseiramente moídos -um pequeno número de folhas de coentros
Para aqueles de vós que se perguntam como é uma raiz de coentro, bem aqui está:
Comece por esmagar os amendoins.
Esmagar a pimenta, raiz de coentro e alho num almofariz e pilão a uma pasta.
Adicionar esta pasta ao camarão e carne de porco e misturar bem.
Numa panela, levar o creme de coco a ferver em lume brando.
Adicionar a mistura camarão/porco, misturar bem e depois adicionar o açúcar, o nome nuoc e a polpa de tamarindo.
Ferver até o molho engrossar, depois adicionar a pasta de caril vermelho.
Acrescentar os amendoins e cozinhar até ter um molho bastante espesso. Retirar do fogo.
Aquecer óleo num wok ou numa frigideira.
Quando o óleo está quente (isto pode ser visto mergulhando um pauzinho no óleo, quando aparecem bolhas na ponta do pauzinho, o óleo está quente!)
Fritar as patties durante um minuto, ou até dourar castanho.
Organizar os tapetes num prato,
colocar um bocado de molho em cima
depois terminar com uma folha de coentro e uma fina fatia de pimenta jalapeno.
