Há tantas versões de rolos de ovos como há cozinheiros! Cada um tem o seu pequeno extra ou preferência. Pela minha parte, gosto deles muito tradicionais. Sem especiarias (excepto sal e pimenta), sem molho de soja, sem ervas aromáticas ou óleo de sésamo, nada de chinês de facto! Porque estamos no Vietname com esta deliciosa receita . É uma simplicidade actualizada. E com estes ingredientes fáceis de encontrar, estes rolos de ovos levam-nos até aos confins da terra!
Receita para rolos de ovos de porco (para 20 rolos):
-20 folhas de arroz -molho especial para rolos de ovo (nome nuoc, açúcar, vinagre, alho, piripiri) (a gosto!)
Brincadeira: -400g de lombo de porco, picado -175g de rebentos de feijão -100g de vermicelli -1 cenoura grande -1 meia cebola -1 ou 2 ovos grandes (usei dois e estava deliciosamente mole por dentro!) -25g cogumelos pretos secos -sal, pimenta
Aqui estão todos os elementos! Tudo o que falta é sal e pimenta.
Preparar os cogumelos pretos. Cozinhei-os durante 10 minutos em água a ferver.
Esvaziar e secar bem, depois cortá-los em pedaços.
Acrescentar o lombo de porco picado.
Mergulhar a aletria em água morna durante 10-15 minutos. Esvaziar bem e secar.
Em seguida, cortá-los em pedaços bastante pequenos. Adicioná-los à carne de porco e aos cogumelos.
Cortar a cenoura e acrescentar.
Acrescentar também os grãos de feijão, a meia cebola finamente picada e os dois ovos.
Misture bem à mão! Os ingredientes vão cheirar melhor! Tempere com sal e pimenta (não hesite em adicionar muita pimenta). Para verificar o tempero, basta cozinhar uma quantidade muito pequena numa panela e provar!
Mergulhar os bolos de arroz em água fria. Mergulhá-los em grupos de 3 ou 4.
Quando o bolo estiver mole (cerca de 2 minutos!), colocá-lo sobre um pano seco colocado na superfície de trabalho.
Remover o excesso de água da parte superior com uma toalha de papel.
Colocar o equivalente a uma colher de sopa cheia de enchimento no meio, na parte inferior.
Enrolar a salsicha de recheio em partes, apertando-a bem juntas.
Dobrar os lados sobre o meio.
Depois rolar até ao fim, apertando bem. O rolo de ovos está pronto!
Agora basta fazer o mesmo para todos os outros rolos de ovos!
Para evitar que os rolos de ovos inchem, basta colocá-los no frigorífico durante a noite. Desta forma, a pasta de arroz vai endurecer e evitar um inchaço excessivo!
Aquecer uma frigideira meio cheia de óleo. Mergulhar os rolos de ovos em três ou quatro de cada vez.
Deixe-os arrefecer por alguns momentos em toalhas de papel antes de os comer com salada e molho de rolo de ovo! Basta fazer a sua própria mistura adicionando nuoc nam, açúcar, alho, piripiri, vinagre… De acordo com o seu gosto!
