Há mais de 7 anos atrás, sugeri o húmus tradicional (receita AQUI). Desta vez estou a fazer uma pequena variação, porque como húmus quase todas as semanas em casa. Com pimenta vermelha, parpika, chilli e um toque de mel, este húmus é uma deliciosa mudança de ritmo e traz cor à mesa. Pronto em poucos minutos, pode ser desfrutado com torradas.
Receita para 4 a 6 pessoas:
500g de grão de bico em lata, drenado
150g de pimentos vermelhos assados descascados
60g de tahini
1 dente de alho
Azeite de 50g
10g de sumo de limão
1 colher de chá de mel
1 colher de chá de paprica
1/4 colher de chá de pimenta quente
Coloque o grão de bico e os pimentos escorridos na tigela do seu liquidificador. Desta vez rompo com a tradição e ponho tudo no liquidificador, porque desta forma o húmus está pronto em 3 minutos… Nota de Bernard : para esta receita expressa, utilizo grão-de-bico enlatado ou em frasco. Também se pode encontrar facilmente pimentos assados em frascos. Isto vai funcionar bem aqui.
Adicionar o tahini, alho, azeite, sumo de limão e mel.
Misturar com um creme suave. Acrescentar a paprica.
Usei um puré de piripiri que tinha no frigorífico. Mas não hesite em usar chili em pó ou mesmo harissa.
Acrescentar um pouco (se necessário) e sal a gosto.
Misture uma última vez.
Verter o húmus da pimenta vermelha em taças, regar com azeite e polvilhar com um pouco de páprica.
