Aqui está a minha receita de gougères de queijo. Têm uma textura extremamente saborosa . Crocantes no exterior, revelam um coração a derreter no interior. Podem ser feitos em qualquer tamanho, mas prefiro-os mais pequenos, porque dessa forma estalam ainda mais por causa do queijo por cima. Uma pequena maravilha simples a fazer.
Receita para gougères:
-250ml de água
-250ml de ovos (é necessário um volume para que a pastelaria choux tenha sucesso! são cerca de 5 ovos)
-140g de farinha
-110g de manteiga
-5g de sal
-pepper, noz-moscada
-150g de queijo ralado (Emmental não é tão bom!!) + um pouco para polvilhar
Pré-aquecer o forno a 180°C.
Colocar a água, manteiga e sal numa frigideira.
Levar à ebulição em lume brando.
Acrescentar a farinha de uma só vez, sem o calor.
Mexer bem (mesmo com bastante força!!) e depois colocar de novo em lume brando durante 1 minuto para secar a massa. É preciso continuar a misturar. A massa sairá do fundo da frigideira.
Verter a massa para dentro de uma tigela.
Adicionar os 250 ml de ovos batidos pouco a pouco à massa (mexendo bem de cada vez).
Agitar vigorosamente para combinar.
Acrescentar o queijo ralado.
Adicionar pimenta e noz-moscada ralada.
Utilizar um saco de tubagem para fazer pequenas pilhas. Não importa a forma, eles vão inchar.
Polvilhar queijo ralado em cima.
Colocar no forno e cozer durante 18-20 minutos a 180°C. Desfrute-o quente! Os gougères serão estaladiços no topo e derreterão na boca.
