ها هي وصفتي للجبن الكوجير. لديهم نسيج الى ابعد حد طيب المذاق. كلها مقرمشة من الخارج ، وتكشف عن قلب يذوب من الداخل. يمكنك جعلها بأي حجم ، لكنني أفضلها أصغر ، لأنها بهذه الطريقة تنضج أكثر مع إضافة الجبن في الأعلى. عجب صغير من السهل جدا تحقيقه.
وصفة الكوجير:
-250 مل من الماء
-250 مل من البيض (تحتاج إلى حجم لكي تنجح عجينة choux! أي حوالي 5 بيضات)
– 140 جرام دقيق
– 110 جرام زبدة
– 5 جرام ملح
– الفلفل وجوزة الطيب
-150 جرام من كونتي أو غرويير المبشور (الإيمنتال أقل جودة !!) + القليل للرش
يُسخن الفرن على حرارة 180 درجة مئوية.
نضع الماء والزبدة والملح في قدر.
يُغلى المزيج على نار خفيفة.
نضيف الدقيق كله مرة واحدة على النار.
تخلط جيدا (حتى بقوة!) ثم العودة إلى درجة حرارة منخفضة لمدة دقيقة واحدة لتجفيف العجين. عليك أن تخلط باستمرار. ستنسحب العجينة بعيدًا عن قاع المقلاة.
صب الخليط في وعاء.
أضيفي 250 مل من البيض المخفوق شيئًا فشيئًا على العجينة (مع التحريك جيدًا في كل مرة).
تخلط بقوة لتجانس كل شيء.
أضف الجبن المبشور.
يتبل بالفلفل ويضاف إليه جوزة الطيب المبشور.
باستخدام كيس الأنابيب ، اصنع أكوامًا صغيرة. بغض النظر عن الشكل ، سوف تنتفخ.
يرش الجبن المبشور على الوجه.
يوضع في الفرن ويطهى لمدة 18-20 دقيقة على 180 درجة مئوية. استمتع بالحرارة! سيكون الكوجير مقرمشًا من الأعلى ويذوب جميعًا من الداخل.
