A Primavera está aqui e dá-me vontade de comer bem! Como todas as estações do ano, dir-me-ão! Isto não é realmente uma receita, mas sim o prato que fiz para mim num almoço de domingo. Uma rápida viagem ao mercado e voltei com uns lindos espargos verdes, que adoro, e um frango de criação ao ar livre. Um pouco de cor com uma batata doce e aqui estou eu com uma refeição que gostei. E como muitos de vós me escrevem a pedir algumas coisas básicas, aqui está uma maneira simples de cozinhar frango para um resultado saboroso e carne suculenta!
Receita para 4 pessoas :
1 frango ao ar livre
2 cachos de espargos verdes
1 batata doce grande
1 cabeça de alho
sal, pimenta
azeite de oliva
30g de manteiga semi-salgada
De volta do mercado para esta boa refeição!
Colocar o frango num prato à prova de forno. Polvilhe-o com azeite e massaje-o bem, mesmo por baixo. Adicionar sal e pimenta em todos os lados. Colocar um pouco de manteiga em cima. Colocar a cabeça inteira do alho, parcialmente descascada, num pouco de azeite.
Colocar o prato no forno frio e depois colocá-lo no forno a 180°C sem pré-aquecimento durante um total de 1h15. Mas voltaremos a ele após 30 minutos para adicionar as batatas doces.
Para os espargos, nada poderia ser mais fácil!
Tome-os nas suas mãos e torça-os em direcção à base.
Isto irá naturalmente quebrar no lugar certo. Em geral, o talo é mais macio, excepto nos espargos recém-colhidos. Ao quebrá-los, livra-se da parte má. Tentar estar o mais perto possível do pé para perder o mínimo possível.
Descascar e cortar as batatas doces.
Regar com um pouco de azeite de oliva.
Após 30 minutos de cozedura, retirar o frango do forno.
Vire-a e adicione as batatas doces. Recolher alguma da gordura para pingar sobre a carne. Pode adicionar um traço de água.
Regressar ao forno por mais 45 minutos. Nesta altura, tudo começa a cozinhar bem. O frango já se encontra no forno há 1 hora e 15 minutos. Virar novamente o frango para a cozedura final.
Aumentar a temperatura do forno para 210°C. Quando estiver à temperatura, colocar a galinha dentro dela durante 15 minutos. Isto dá-lhe tempo para cozinhar os espargos. Verter um pouco de óleo para uma panela grande.
Colocar os espargos e saltear em lume forte.
Devem ser levemente tostados. O tempo de cozedura ideal para que permaneçam estaladiços é de 8-9 minutos. Acrescentar um pouco de sal.
Está na hora de comer! Sirva o frango, que normalmente é um pouco grelhado, com o seu acompanhamento de batata-doce e espargos verdes fritos!
