Cada um tem a sua melhor receita de frango com estragão! Mas muitos de vós pedem-me estes grandes clássicos da nossa cozinha. Apresento-vos a minha versão, que é a que eu gosto: com um molho rico, cremoso e perfumado! Não há aqui nada de complicado. Basta cozinhar bem o molho para lhe dar tempo de reduzir, de modo a que fique bem. Um deleite para servir com arroz simples!
Receita de frango Tarragon para 4 pessoas:
uma galinha cortada em pedaços
2 colheres de sopa de azeite de oliva
1 chalota
150ml de vinho branco seco
500ml de caldo de galinha
1 molho de estragão
40cl creme completo
sal, pimenta
Aquecer uma caçarola em lume moderado com o azeite. Acrescentar a galinha.
Deixe-o colorir, virando-o de vez em quando. No total, demora cerca de dez minutos.
Cortar finamente a chalota.
Retirar a galinha da panela, deixando a gordura para trás (a gordura é boa!) e substituí-la pela chalota.
Mexer regularmente durante dois ou três minutos, depois adicionar o vinho e o caldo de galinha.
Colocar o frango de volta. Retiro a maior parte da pele nesta altura, caso contrário o prato torna-se demasiado gordo. Deixo alguns sobre um pedaço de coxa, por exemplo.
Cozinhar em lume brando durante vinte a trinta minutos. Certifique-se de que o frango está cozinhado. Quando estiver cozido, retire-o do caldo e coloque-o de lado num prato.
Reduzir agora o stock para metade. Isto pode demorar algum tempo.
Cortar grosseiramente o estragão.
Colocá-lo no caldo de carne.
Verter o creme completo.
Nota de Bernard: se preferir não usar natas, terá de adicionar uma colher de sopa de farinha às chalotas antes de deitar no caldo e no vinho. Caso contrário, o molho será tão a pingar como a água!
Permitir reduzir novamente para a consistência desejada. Para mim é como um creme de ovos. O molho deve revestir a colher.
Acrescentar sal e pimenta a gosto.
Quando estiver, voltar a colocar o frango e deixá-lo aquecer durante cerca de dez minutos antes de servir com arroz simples, batatas cozidas a vapor ou massa.
