Tinha provado várias vezes estes ravioles de foie gras num restaurante em Paris, o Comptoir de la Gastronomie, na rue Montmartre em frente a Mora. Vou lá para ocasiões especiais com amigos que vêm do estrangeiro para me visitarem. Entre outras coisas, existem estes foie gras ravioli divinos. O segredo é bem guardado. Aqui está a minha receita após várias tentativas. Nem todos gostam de foie gras quente, mas eu pessoalmente fico louco na sua presença! Aqui estão estes ravioles finos, recheados com cubos de terrina de foie gras e cobertos com uma trufa, mel e creme de mascarpone… Talvez tenha descoberto os croutons de manteiga de trufa negra, aqui uso a manteiga de trufa que faço no Inverno e congelo para o resto do ano.
Receitas para ravioles com foie gras para 4 pessoas:
-1 pacote de massa wonton (são necessárias 40 folhas para os 20 ravióli)
-1 foie gras semi-cozido caseiro(método 1, 2 ou 3)
-1,5 litros de caldo de galinha + 1 colher de chá de mel
-1 pequeno frasco de batatas fritas de trufas, com o seu sumo
-sal e pimenta
Preparar um foie gras caseiro, escolhendo o método de cozedura. Congelo sempre um foie gras cozinhado para ter um apoio só para o caso de! Cortar o foie gras em cubos de dois centímetros.
Dispor as folhas wonton sobre uma superfície de trabalho. Humedecer uma folha de wonton (com uma escova ou com os dedos) e colocar um cubo de foie gras no centro.
Colar uma folha de wonton em cima da anterior e soldá-la bem. Corte com um cortador de biscoitos para obter ravióli redondo.
Faça o mesmo para todos os ravióli. São necessários 4 ou 5 ravióli por pessoa.
Quando se trata de servir, tudo acontecerá muito rapidamente, uma vez que os ravióli cozinham muito rapidamente.
Aqui está o frasco de lascas de trufas. Ainda há sumo no interior e isso é perfeito para esta receita.
Preparar o molho. Colocar o sumo de trufa (que está no frasco), manteiga de trufa e mel numa caçarola.
Derreter a mistura e adicionar o mascarpone e o creme de chicotada. Misturar bem e cozinhar a engrossar o molho.
Cozer o caldo de galinha com uma colher de chá de mel. Salgar bem e adicionar o ravioli.
Cozinhe-os durante 50 segundos…!
Drená-los e colocá-los nas placas. Tampo com creme de trufas.
Depois junte as fichas de trufas em vaso e desfrute imediatamente!
