Apesar de estar a ficar frio aqui, é oficialmente Outono! E o que adoro nesta estação é poder mordiscar castanhas assadas ou fazer bolos com elas. Portanto, esta é a oportunidade para eu preparar a minha receita para um deleite sem farinha e, portanto, sem glúten de castanhas. Este bolo é deliciosamente estaladiço na superfície (graças às próprias castanhas) e macio e perfumado no interior (graças ao pó de amêndoa, baunilha, manteiga fresca e uma pitada de conhaque). Venha e experimente esta receita rápida e fácil. Além disso, estes bolos mantêm-se bem (mais de duas semanas).
Receita de fondant de castanhas:
-245g de castanhas cruas (Picard’s são perfeitas!)
-145g de açúcar
-110g de manteiga muito macia
-25g de pó de amêndoa
-1 ovo grande (60g)
-15g de conhaque
-1 colher de chá de baunilha líquida
Para esta receita, gosto de utilizar as castanhas cruas de Picard. Eles são perfeitos! Basta deixá-los descongelar. Caso contrário, a receita funciona, claro, com castanhas frescas.
Moer as castanhas num moedor de carne ou misturador a um puré fino.
Se for utilizado o helicóptero, deve ser utilizada a grelha fina.
Colocar o puré de castanha numa tigela, adicionar o açúcar, baunilha, manteiga suave e pó de amêndoa.
Misturar bem e adicionar o conhaque.
Em seguida, adicionar o ovo.
Colocar a massa em quatro pequenos moldes de 9cm de diâmetro, ou um molde de 18cm, previamente untado com um agente desmoldante.
Cozer a 150 graus durante 45 minutos.
Sair do forno e deixar arrefecer num tabuleiro de ir ao forno. Os bolos não moldados podem ser colocados de novo no forno durante 5 minutos para obter uma superfície ligeiramente estaladiça e um interior macio!
Armazenar estes bolos em película aderente num local hermético.
