Aunque aquí está haciendo frío, ¡es oficialmente otoño! Y lo que más me gusta de esta temporada es poder mordisquear castañas asadas o hacer pasteles con ellas. Así que esta es la oportunidad para preparar mi receta de una delicia de castañas sin harina y, por tanto, sin gluten. Este pastel es deliciosamente crujiente en la superficie (gracias a las propias castañas) y suave y fragante en el interior (gracias al polvo de almendra, la vainilla, la mantequilla fresca y un toque de coñac). Ven a probar esta receta rápida y fácil. Además, estos pasteles se conservan bien (más de dos semanas).
Receta de fondant de castañas:
-245g de castañas crudas (¡las de Picard son perfectas!)
-145g de azúcar
-110g de mantequilla muy blanda
-25g de polvo de almendra
-1 huevo grande (60g)
-15g de coñac
-1 cucharadita de vainilla líquida
Para esta receta, me gusta utilizar castañas crudas de Picard. Son perfectos. Deja que se descongelen. Por lo demás, la receta funciona por supuesto con castañas frescas.
Triturar las castañas en una picadora de carne o en una batidora hasta obtener un puré fino.
Si se utiliza la picadora, debe usarse la rejilla fina.
Poner el puré de castañas en un bol, añadir el azúcar, la vainilla, la mantequilla blanda y la almendra en polvo.
Mezclar bien y añadir el coñac.
A continuación, añada el huevo.
Colocar la masa en cuatro moldes pequeños de 9 cm de diámetro, o en uno de 18 cm, previamente engrasados con un desmoldante.
Hornear a 150 grados durante 45 minutos.
Sacar del horno y dejar enfriar sobre una rejilla. Los pasteles sin moldear pueden volver a introducirse en el horno durante 5 minutos para conseguir una superficie ligeramente crujiente y un interior blando.
Guarde estos pasteles en film transparente en un lugar hermético.
