Ainda não conhece o Clo? É uma vergonha! Mas em breve estará a fazer os seus pequenos cremes de caramelo e a falar sobre isso nos corredores… Brincadeira à parte, Clo é um grande amigo meu que nos tinha feito pequenos potes como sobremesas, por isso pedi-lhe a sua receita. É algures entre creme de leite, panacotta e crème brûlée, sem o longo tempo de cozedura. Apesar do ingrediente que o mantém unido, o que poderia levar a crer que o resultado é demasiado firme, a textura é perfeitamente lisa e cremosa. Um deleite para fazer e repetir. Muito obrigado ao nosso querido Clo por esta fabulosa receita!
Receita dos cremes de caramelo da Mãe Clo:
-120g de açúcar para o caramelo
-250ml de leite
-250ml de creme completo
-4 gemas de ovo
-30g de açúcar
-2,5 folhas de gelatina
Primeiro, preparar o caramelo seco. Verter uma pequena quantidade dos 120g de açúcar numa caçarola em lume médio.
Derreter o açúcar em caramelo. Tenha cuidado para não o queimar! Depois adicionar o açúcar restante um pouco de cada vez, certificando-se de que carameliza bem.
Quando os 120g de açúcar forem caramelizados, verter o leite. Depois, aquecer muito suavemente para que todo o caramelo se derreta no leite.
Acrescentar o creme quando todo o caramelo tiver derretido. Levar tudo à ebulição.
Entretanto, bata as gemas com 30g de açúcar para obter uma espuma que branqueie um pouco.
Verter o leite/creme de caramelo por cima.
Trazer o creme para 88-89°C. Como um creme de ovos. Deve revestir a colher.
Mergulhar as folhas de gelatina (2 folhas e meia), espremê-las nas suas mãos e adicioná-las ao creme quente. Misturar bem com uma colher.
Verter em 4 ramequins ou potes individuais.
Deixar arrefecer à temperatura ambiente e depois arrefecer durante pelo menos 4 horas (de noite é melhor!) antes de comer…
