Quando estou em Banguecoque, nunca deixo de comprar estes cajus e pralinas de sésamo, que são ligeiramente caramelizados e acima de tudo muito estaladiços! O açúcar é salgado para excitar ainda mais as nossas papilas gustativas. Estou a oferecer esta receita principalmente como um presente para mim, porque agora posso fazer e oferecer estes chocolates tailandeses sem ter de viajar pelo mundo inteiro! Aqui não há qualquer dificuldade e podem ser encontrados cajus crus e sementes de sésamo não torradas em qualquer loja “biológica” ou supermercado asiático.

250g de castanhas de caju não torradas, não salgadas
-250g de açúcar
-meia colher de chá de sal
-Sementes de gergelim não torradas
Colocar o açúcar e o sal numa panela grande com água suficiente para o encharcar completamente.
Ferve-se até as bolhas de açúcar ficarem espessas.
Acrescentar os cajus simples à panela.
Deixar ferver, mexendo constantemente. O açúcar vai então lixar. Tentar revestir e separar o mais possível as castanhas de caju.
Acrescentar sementes de sésamo. Isto pode ser encontrado em . . Mas uma colher de sopa parece bastante adequada.
Enquanto se mexe constantemente, deixar a superfície da castanha de caju caramelizar ligeiramente, sem derreter todo o açúcar. Basta colocar uma fina camada de caramelo em cima do açúcar que cobre os cajus.
Verter sobre papel vegetal ou tapete de cozedura.
Quando tiverem arrefecido, separe os que estão presos uns aos outros, depois coloque-os numa caixa hermética, uma vez que estes chocolates são muito sensíveis à humidade!
Embalados, estes chocolates podem ser guardados por muito tempo, ou oferecidos como um presente!
