El azúcar está salado para excitar aún más nuestras papilas gustativas. Ofrezco esta receta principalmente como un regalo para mí, porque ahora puedo hacer y ofrecer estos chocolates tailandeses sin tener que viajar por todo el mundo. No hay ninguna dificultad en este sentido y los anacardos crudos y las semillas de sésamo sin tostar se pueden encontrar en cualquier tienda «ecológica» o supermercado asiático.

Poner el azúcar y la sal en una cacerola grande con suficiente agua para empaparla completamente.
Hervir hasta que el azúcar burbujee densamente.
Añade los anacardos a la sartén.
Dejar hervir, removiendo constantemente. Entonces el azúcar se enarenará. Intente cubrir y separar los anacardos lo máximo posible.
Añade las semillas de sésamo. Se puede encontrar en . . Pero una cucharada sopera parece bastante adecuada.
Sin dejar de remover, deje que la superficie de los anacardos se caramelice ligeramente, sin que se derrita todo el azúcar. Sólo hay que conseguir una fina capa de caramelo sobre el azúcar que cubra los anacardos.
Verter en papel de hornear o en un tapete para hornear.
Cuando se hayan enfriado, separa los que estén pegados y mételos en una caja hermética, ya que estos bombones son muy sensibles a la humedad.
Envasados, estos chocolates pueden conservarse durante mucho tiempo o regalarse.
