Aqui está a receita para o cheesecake! Na sequência do pedido de muitos leitores por correio, finalmente entrego-lho! Haverá várias variações no futuro no meu blogue. Para uma primeira receita de cheesecake, dou-lhe uma receita mais leve, com um centro cremoso, uma cobertura opcional de creme de limão e uma textura mais arejada e derretida antes de atacar mais tarde o muito mais denso e rico cheesecake nova-iorquino. O nosso cheesecake do dia é bastante grosso mas quase leve (em textura!) como os que se podem encontrar nas famosas lojas americanas “The Cheesecake Factory”. Delicioso, especialmente se comer uma refeição ligeira antes, caso contrário não obterá o pleno benefício da sua riqueza!
Receita de cheesecake:
-210g de bolachas “digestivas -125g de manteiga -20g de açúcar
-900g de creme de queijo -35g de farinha -1+1/2 colheres de chá de baunilha líquida -1+1/2 colheres de chá de sumo de limão -a raspa de meio limão -250g de açúcar -2 ovos inteiros + 1 gema -235g de creme duplo
Cobertura de limão: -150g de creme duplo -20g de açúcar -2 colheres de chá de sumo de limão
Um ponto importante antes de começarmos: Os ingredientes devem estar à temperatura ambiente (especialmente o queijo creme) para evitar grumos. Este é o queijo creme. Em França, a marca Philadelphia é a principal, mas desde que seja um queijo creme com um teor de gordura não reduzido, é bom!
E aqui estão os digestivos que agora podem ser encontrados muito facilmente nos supermercados na secção “world products”!
Comece por pré-aquecer o forno a 160°C e colocar os biscoitos digestivos numa tigela grande.
Moer à mão um pó ou dar-lhe um rodopio no liquidificador! Acrescentar o açúcar…
E a manteiga derretida.
Misturar bem.
Colocar uma folha de papel impermeável a gordura numa forma de mola de 23 cm de diâmetro. Basta abrir o molde, colocar a folha e depois fechá-la para a cunhar.
Verter a massa em pó para a frigideira.
Em seguida, pressionar bem com a parte de trás de uma colher.
Cozer durante 10-15 minutos (a 160°C).
Em seguida, preparar o creme de cheesecake. Colocar o queijo creme à temperatura ambiente na tigela de uma kitchenaid ou de um processador de alimentos de madeira de Kenwood. Pode passar sem ele e fazê-lo numa tigela grande com um batedor manual. O princípio é não “bater em demasia” o creme!
Comece a misturar a baixa velocidade para dar uma textura cremosa e evitar grumos. Pode ser deixado a funcionar durante 2 minutos.
Adicionar o açúcar e a farinha e misturar bem.
Acrescentar a baunilha líquida.
Espremer um limão.
Acrescentar o sumo de limão (1+1/2 colheres de chá). Acrescentar também a raspa de meio limão, os ovos inteiros e a gema.
Acabar com o crème fraiche.
Deixar mexer apenas para misturar, mas não mais. Na foto tenho alguns caroços! As etapas da receita devem ser seguidas para evitar isto. Eu queria fazê-lo mais depressa e este é o resultado!
Verter a mistura no molde, que foi untado com manteiga nas laterais ou com uma tira de papel vegetal no interior.
Para um cheesecake extra húmido, colocar uma pequena panela de água a ferver no fundo do forno para criar vapor em que o bolo cozinhará.
Cozer durante 10 minutos a 200°C, depois baixar a temperatura para 90°C e cozer durante 30 minutos. O cheesecake está nesta fase colocado nos lados, e um pouco trémulo no centro. Isto é exactamente o que procuramos! Deixar o bolo arrefecer até à temperatura ambiente no forno. Demora cerca de duas horas!
Retire o cheesecake, e coloque a frigideira no frigorífico por…. 24 horas! É o tempo que leva para obter um cheesecake perfeito!
No dia seguinte, preparar a cobertura colocando o crème fraiche, açúcar e sumo de limão numa pequena tigela. Misturar bem.
Verter a mistura sobre o cheesecake e espalhá-la bem com a espátula.
Arrefecer durante uma boa hora e servir refrigerado.
